Dinner in a Pumpkin

Before you fill up with all those Halloween sweets and treats, here is a healthy but fun idea for dinner. A friend of mine said she has served this for years and her kids look forward to it each Halloween. It's very easy so...give it a try! Spooky Halloween to all.

Dinner in a Pumpkin

1 medium pumpkin (10 lbs. or so) with top cut out and insides scraped clean
2 T. oil
2 lb. ground beef
2 1/2 tsp. salt
1 tsp. pepper
3 T. chopped onion
1 tsp. oregano
1 tsp. vinegar
garlic to taste
1 small can tomato sauce
3 eggs, beaten
4-5 potatoes, parboiled and cubed

Brown ground beef in oil; drain and season. Add remaining ingredients and put in pumpkin. Put top back on the pumpkin and bake at 350 degrees for 1-2 hours. (You can double this recipe and put ingredients in a larger pumpkin)
