Keep It Simple

I've had many offers for dinner since my surgery Monday. I managed to convince them all that Dad and I love take-out and can manage just fine, except for the wife of one of Dad's peers at Sprint, who phoned yesterday afternoon and said, "I'm almost at your house and I have your dinner." What could I say...so she brought our dinner. I learned something wonderful, though, from this lovely person...a meal doesn't have to be anything extravagant or time-consuming to taste delicious and be greatly appreciated. Here's what she brought, and I'm going to remember this in the future when I want to take a meal to someone -- I think she bought a rotisserie chicken from the grocery store and just wrapped it in foil, so all I had to do is warm it a little in the oven. She may have roasted it at home, but I don't think so. Then she brought a bag of salad greens, and a little snack-size ziplock bag containing a few little grape tomatoes, some grated mozarella cheese, and a few of those wonderful seasoned almonds that you can buy in the salad section. There was also a bowl of rice, which I'm sure was just made from a box of seasoned rice, some store-bought rolls, and six, still-warm brownines for dessert (which I'm sure were from a mix, but they tasted great). How easy was that! But...it was so delicious!

I know that Suzie had some friends bring dinner in after she got home from the hospital, but we laughed because each day the person bringing food would say, "I've had such a busy day, do you mind if I just order some pizza and bring it?" or "I'm buying hamburgers for my family tonight, may I bring some to you?" Kind of makes you feel like bringing dinner is a problem and you could easily call Domino's yourself! So I love this simple meal my friend brought, which tasted homemade but really didn't take her long to put together.

Just a thought, since I know you will all have many opportunities to take meals to people, but may find your time limited. Don't stress...keep it simple!

A Blast from the Past

We spent last weekend with Suzie and the kids in Colorado Springs and I went flying back some twenty-five or six years to when Joseph was nearly two. Merlin is Joseph all over again! The way he looks at you (very serious), the way he sucks his thumb, the way he throws himself on the floor when he's miffed, the way he laughs...everything he did made me think I was still in my late twenties and raising Joseph and the rest of you. The whole weekend has really pulled at my heart-strings. Now my babies are all grown-up and fretting about their own babies growing up too fast. My goodness...I never could have imagined that time would fly by so quickly. Here I am, a grandma, and feeling it, but it truly seems like yesterday you were all running around the house and I was just a young mom. We also visited with Grandma Copen a couple of times while in Colorado, and I am reminded that I will, all too soon, be where she is. What a TRIP this life is! We learn so much in this brief stay on planet Earth, don't we? Amazing. Enjoy this precious day you have...and love those babies!
